HEALTHY VEGAN LENTIL SOUP RECIPE
Everybody loves a hot cup of soup now and then (or everyday). It represents a cozy meal to share with loved ones. It's funny because i had a friend come to Florida from Iowa to visit and she thought it was so strange that we were indulging in such soup in the middle of the hot summer! I laughed and said, "Haha, i have soup all year round!"
This recipie can be followed exactly to provide a lighter vegan option, or could have meat added or a beef broth. A bowl of this amazing soup has amazing fiber and protein properties due to the health bennefits of green lentils.
Recipie:
Details- Serves 4-6 (419gm [about 1.85 cup] serving)
- Prep Time: 10mins
- Cook Time: 60mins
Ingredients-
•3 cloves garlic minced
•1 onion finely chopped
•1 green bell pepper seeded, chopped bite size
•2 stalks celery chopped bite size
•2 carrots chopped bite size
•1 quart vegetable broth
•1/2 cup tomato sauce
•1 bay leaf
•1 teaspoon turmeric
•1 teaspoon cumin
•1 tablespoon dried oregano
•1 cup green lentils
(Optional)- Feta cheese
- Hot dog pieces
- Ground beef/ turkey meat
Directions-
{Slow Cooker Method}
Put all the ingredients in a slow cooker and cook on low for 4-5 hours or until ingredients are tender. Season with salt and pepper and serve.
{Stove Top Method}
Put all the ingredients in a large pot and bring to a boil. Reduce heat to a simmer, cover and cook for 40-60 minutes, or until vegetables are tender. Season with salt and pepper and serve.
